Ricotta Salata Marzolino is a semi-firm, salted ricotta from Sardinia made from sheep’s milk and aged for around two weeks. During maturation, it develops a compact texture and a pronounced savoury profile with pleasant tang and a touch of sheep’s milk richness. Traditionally grated or crumbled over pasta, salads and vegetable dishes, it adds both saltiness and creamy depth. It is excellent over tomato-based sauces, roasted aubergines or simple grilled vegetables. Its unique character positions it somewhere between a grating cheese and a fresh cheese, making it a versatile, flavoursome addition to Italian-inspired cooking.
