Robiola Rocchetta, also from Alta Langa, is a mixed-milk soft cheese crafted from cow’s, sheep’s and goat’s milk and aged for two to four weeks. It has a natural, slightly wrinkled rind and a creamy yet gently chalky core that becomes more unctuous with time. The flavour is complex but balanced, combining lactic freshness, mild tang and a touch of goat’s milk character without sharpness. It is excellent on rustic bread with honey or fruit compotes and pairs beautifully with crisp white wines or light reds.
